Abstract
This study aimed to determine the changes in total reducing sugars (TRS), dry matter and total phenolic contents (TPC) of java plum (Syzgium cumini)during different maturation and ripening stages. For this study, five stages from green to mature and ripe stages have been considered. Results showed that dry matter and total phenolics decreased slightly whereas total reducing sugar increased. Statistically, a strong correlation was found between the dry matter and TPC of the fruit during maturation and ripening and these would be a good indicator for determining the optimum maturity stage.....
