Development of process parameters from full scale production of sorghum syrup

Experiments were carried out to develop the process parameters for the production of sorghum syrup. A number of paramenters including pH, temperature and acid/enzyme inversion were evaluated in order to produce a syrup with the desired market specifications. This resulted in a process flow in which the major unit operations were enzyme inversion of sucrose at 55-60°C, hot clarification and starch elimination at 95°C and pH 7.2....
